Hundreds of pounds of local and organic zucchini and peaches have been successfully harvested and preserved.
The Dining Services Garden at Kentland Farm has been fruitful this summer; quite literally. The abundance of peaches and zucchini harvested has allowed Dining Services to freeze the leftovers. Juicy, colorful peaches and crunchy zucchini will make appearances across the seasons. That’s right–in the dead of winter, one will be able to find a local peaches featured in recipes. The squashlike green will make an appearance in the form of sweet, irresistible zucchini bread. Get excited. Summer’s almost over, but you’ll be able to enjoy its produce throughout the cold, windy school year.
