Served on grilled, rustic oat prairie brown bread with savory italian seasoning, this is much more than a sandwich. It features eggplant, roasted red peppers grown organically, and a jack-style cheese from Fairfield, Virginia. The bread was baked fresh in Floyd, Virginia at the Sweetwater Baking Company. For a high-class lunch in the dining centers, it doesn’t get much better than this.
